En 1821, William Smith fonda la distillerie Wolfburn à la périphérie de Thurso, tirant son nom d'un cours d'eau voisin. Construite à partir de robustes dalles de pierre du Caithness, la distillerie devint rapidement un important producteur de whisky de malt.
